What are vegan pancakes made of?

The main essential ingredients you need to make egg and dairy-free pancakes are flour, milk, and a binding ingredient. Typically, pancakes are made using both dairy milk and eggs, but creating a vegan version couldn’t be simpler.

Nowadays there are plenty of nutritious plant-based milks available so you can easily swap dairy milk for a dairy-free alternative. Along with flour, a little sugar for sweetness if you like, all you need to do next is find a vegan egg replacement to bind them together.

We’re lucky to have lots of choices when it comes to vegan egg substitutes that make creating a plant-based stack simple.

To bind your egg-free pancakes, you can choose from a variety of natural binding agents such as flaxseed, chia, banana and even applesauce. Silken tofu also makes a great plant-based egg alternative and ensures your pancakes are packed with protein to keep you full until lunch.

Top tips for making perfect plant-based pancakes

Although making pancakes without eggs or dairy is simple, there are a few tips to follow to help you achieve the perfect pancake.

To save you from making soggy stacks of disappointment this Pancake Day, here are a few top tips to follow for breakfast success:

Vegan crêpes

  1. Allow the batter to rest for at least 30 minutes before cooking. This allows the flour to hydrate fully and for the gluten to relax, resulting in smoother batter and tender crepes.
  2. Vegan crêpe batter may need slight adjustments in consistency compared to traditional batter. If the batter seems too thick, add a little more plant milk until you reach a pourable consistency.

Vegan pancakes

  1. Add a dash both baking powder and baking soda into your pancake batter. These leavening agents help the pancakes rise and gives them a fluffier texture.
  2. Overmixing pancake batter can lead to dense and tough pancakes. Instead, mix the batter until the ingredients are just combined; a few lumps are okay. Overmixing activates the gluten in the flour, resulting in less fluffy pancakes.
  3. Allow the batter to rest for a few minutes after mixing but don’t let it sit too long. This resting period allows the leavening agents to activate and the batter to slightly thicken, resulting in fluffier pancakes. However, if the batter rests too long, the leavening agents may lose their effectiveness.
