These spine-chilling vegan Halloween cookies will get your party guests’ teeth chattering.
They might look intimidating, but constructing these spooky Halloween cookie sandwiches is deceptively simple.
As your vegan cookies cool, cut them in half while they’re still soft to prevent the cookies from cracking.
When they’re fully cooled, spread the cookie halves with sticky strawberry ‘blood’ and line up your vegan mini marshmallows on one half to create the vampire’s toothy grin.
Sandwich the other cookie half on top, then slide two halves of an almond slice between the teeth to create fangs.
Making vegan halloween cookies
The spooky nature of these cookies comes from the decorating, so the actual baking of the cookies is delightfully simple.
Start by creaming together your butter and sugar. You need to mix them well, preferably with a food processor or electric whisk, to ensure that the sugar granules are well dissolved and that the mixture is not too grainy.
Then make your flax egg and add it to the mixture, along with the vanilla extract. One flax egg is made with 1 tbsp of ground flax seed, mixed with 2.5 tbsp hot water.
Add the rest of the cookie ingredients and mix until just combined. Be careful not to overwork the dough at this stage as this can result in dense cookies.
Rest your cookie dough in the fridge before you shape it to help the cookies to hold their shape while cooking.

- 12.5 12.5 g plain flour
- 12.5 12.5 g oat flour
- 10.416666666667 10.416666666667 g vegan butter
- 12.5 12.5 g soft brown sugar
- 0.083333333333333 0.083333333333333 tsp vanilla extract
- 8.3333333333333 8.3333333333333 g dairy-free chocolate chips
- 0.083333333333333 0.083333333333333 flax egg, as above
- To decorate:
- 0.5 0.5 tbsp smooth strawberry jam or strawberry sauce (blood)
- 6 6 (approx) mini vegan-friendly marshmallows (teeth)
- 1 1 sliced almonds, halved lengthways (fangs)
Method
- Preheat the oven to 180°C/350°F/Gas 4.
- To make the cookies: in a large bowl, cream together the butter and brown sugar for 1-2 minutes until well combined.
- Next, add the flax egg and vanilla extract and stir, then add the flour, oats and chocolate chips, mix into a dough and leave to chill in the fridge for 20 minutes.
- Line a baking tray with parchment paper and roll three tablespoons of cookie dough into a ball, place on the tray and flatten slightly, repeat this with all of the mixture. Be sure to leave room around each cookie, as they will spread once cooking.
- Place into the oven for 15 minutes. The cookies should start to set and brown on the edges but still be soft. Remove from oven and leave the cookies for 10 minutes to cool a little. At this point, just before they have hardened and are still a little soft, slice them straight through the middle to make two halves.
- Once cooled completely, spread the jam or sauce over the flat side of each cookie half. Then, on one half, stick the marshmallows in a row, like teeth, to the jam. Sandwich another cookie half on top of the row of teeth. Either side of the two front marshmallows, slide two almond slice halves as fangs. Repeat with all cookies.
