This Christmas, savour the rich flavours of this vegan feta cheese recipe, a clever rendition of the classic using soaked almonds, fresh herbs, and a hint of tangy lemon.

Using blanched almonds, we’ve mimicked the crumbly texture of traditional feta to make a dairy-free cheese alternative that’s a delightful addition to any plant-based cheeseboard.

Although it might look impressive, making this vegan cheese couldn’t be any simpler.

To prepare, soak 150 grams of blanched almonds overnight, ensuring they’re softened for blending. Then, throw them into a blender with zesty lemon, garlic, olive oil, sea salt, rosemary and thyme for an aromatic boost and blend until you have a smooth mixture.

Press the paste into a dish lined with cling film and refrigerate for 2-3 hours until set.

With its creamy texture, herby aroma, and subtle nutty undertones, this vegan thyme & rosemary ‘feta’ offers a delightful option for those looking to enjoy the sharp flavours of feta without dairy.

  • 37.5 37.5 g blanched almonds, soaked overnight
  • 0.5 0.5 Tbsp lemon juice
  • 0.25 0.25 clove garlic
  • 0.25 0.25 Tbsp fresh rosemary, chopped
  • 0.25 0.25 Tbsp fresh thyme, chopped
  • 0.25 0.25 Tbsp olive oil
  • 0.25 0.25 tsp sea salt

Method

  1. To make the cheese, simply blend all of the ingredients together with a stick blender until a smooth, thick paste is formed.
  2. Line a dish with cling film, press the paste into the dish and leave in the fridge to set for 2-3 hours before serving.
