How to make vegan toffee apples
Making the vegan caramel coating might sound difficult, but these hacks will ensure you achieve a perfect, glossy finish to your toffee apples.
Firstly, start by preparing a lined baking tray to place your vegan caramel apples on once you’ve dipped them in the caramel.
The trick to achieving a mirror-like finish on your caramel coating is to avoid crystallising the sugary mixture.
Wiping down the saucepan sides with a wet pastry brush at the start while dissolving the sugar prevents crystallisation, ensuring a smooth caramel.
When it comes to making caramel, patience is key! Allow the sugar mixture to reach the ‘hard crack’ stage (about 150°C) for the perfect, crunchy caramel coating.
When dipping the apples, move quickly and ensure they’re coated thoroughly so they are devilishly dark in colour. Place them on the lined tray to harden, ensuring a spine-chilling finish.
Is food colouring vegan?

- 1 1 large, firm apples
- 66.666666666667 66.666666666667 g granulated sugar
- 30 30 ml water
- 20 20 ml liquid glucose
- a few drops of vegan black gel food colouring
- 1 1 bamboo skewers
Method
- Place the apples and a lined baking tray and push a skewer into each core.
- Place all the remaining ingredients into a large saucepan over a medium heat, to slowly dissolve the sugar.
- Once the sugar has totally dissolved, wipe down the sides of the pan, toward the sugar mixture, with a wet pastry brush. This will help the toffee to stay crystal free.
- Turn up the heat and boil the sugar mix to approx 150°C or the ‘hard crack’ stage.
- Once you have reached this point, turn off the heat and very carefully dip and roll the apples into the toffee, making sure each of them is thoroughly coated. Place on the lined baking tray to harden.
