With sweet apricots and savoury thyme, this crumbly vegan cheese makes a wonderfully balanced option for a festive charcuterie platter.

This flavourful fromage works well with a variety of cheeseboard favourites, and it holds its own as a standalone cheese, served simply with crackers, too.

Party guests will be so impressed with this homemade vegan cheese, they’ll never guess just how easy it was to make.

With just a handful of simple ingredients and ten minutes of preparation you can create a stunning vegan cheese from scratch.

Get a head start on party preparations by soaking your cashew nuts at least two days before the big night.

Then, blend your vegan cheese ingredients until smooth, and stir in the apricot and thyme to give this cheese its distinctive flavour.

Transfer your mixture to a saucepan and simmer over a medium heat for a few minutes, to help bring your cheese together.

Finally, transfer your cooked cheese mixture into a suitable dish or mould and leave to set overnight. The trickiest part is waiting to savour your delicious homemade cheese!

  • 25 25 g cashews, soaked overnight
  • 20 20 ml water
  • 0.66666666666667 0.66666666666667 Tbsp nutritional yeast
  • 0.16666666666667 0.16666666666667 tsp mustard powder
  • 0.33333333333333 0.33333333333333 Tbsp lemon juice
  • 0.33333333333333 0.33333333333333 Tbsp coconut oil
  • 0.16666666666667 0.16666666666667 tsp garlic salt
  • 0.16666666666667 0.16666666666667 Tbsp powdered agar
  • 0.16666666666667 0.16666666666667 Tbsp chopped fresh thyme
  • 8.3333333333333 8.3333333333333 g chopped apricots, chopped

Method

  1. Add the cashews, water, nutritional yeast, mustard powder, lemon juice, coconut oil, garlic salt and agar to a blender and blend until smooth, then stir in the thyme and dried apricots.
  2. Transfer to a saucepan over a medium heat and bring the mixture to a simmer, cook for 3-4 minutes, season to taste.
  3. Pour into a lined dish or mould, and allow to set in the fridge overnight.
