There’s so much about this simple yet delicious vegan porridge recipe that makes it the perfect way to start the day. It has fibre-rich oats to reduce cholesterol, which is also a source of vegan protein and vegan calcium.

The hemp seeds are a complete protein and contain omega 3 fatty acids and an array of vitamins and minerals, especially magnesium and potassium.

Then the raspberries and strawberries are rich in vitamin C and naturally sweet, and the magnesium-rich dark chocolate tops it off.

If you want to substitute or add other berries on top, like blackberries, they still work with the flavour of the dark chocolate. Similarly, if you would like to use another dairy-free milk like oat or rice milk, you can substitute for the same amount.

  • 28.75 28.75 grams raspberries
  • 27.5 27.5 grams vegan dark chocolate with 70% cocoa solids
  • 43.75 43.75 grams jumbo porridge oats
  • 200 200 ml unsweetened almond milk
  • 1 1 tbsp hulled hemp seeds
  • To serve:
  • 28.75 28.75 grams raspberries
  • 28.75 28.75 grams strawberries, sliced

Method

  1. Add the raspberries to a blender or food processor and blend until a smooth purée. Press through a sieve into a small bowl and discard the seeds.
  2. Finely chop a section of the chocolate for decoration and reserve. Break the rest of the chocolate into chunks and set aside.
  3. Add the oats, milk and hemp seeds to a medium-sized saucepan, bring to the boil over a medium heat, stirring all the time then reduce the heat and cook for 4–5 minutes, still stirring until the porridge has thickened. Take off the heat and stir in the large chunks of chocolate.
  4. Spoon the porridge into four bowls, drizzle over the raspberry purée with a teaspoon then decorate with the whole raspberries, sliced strawberries and finely chopped chocolate. Serve immediately.
