Vegan Teriyaki Jackfruit

What does jackfruit taste like?
Unlike ripe jackfruit, young jackfruit has a neutral taste and a firm and fibrous texture. Young jackfruit is perfect for absorbing flavours and is often used to recreate to pulled pork by tearing the jackfruit chunks. This type of jackfruit is typically canned and is readily available in most supermarkets.
This jackfruit recipe however keeps the chunks whole, this allows the jackfruit to absorb the sauce and the teriyaki flavour.
What is the flavour of teriyaki?
Traditionally, teriyaki is made with soy sauce, mirin (a sweet, low-alcohol Japanese cooking wine), sugar, and sake (an alcoholic spirit made with fermented rice). Teriyaki has a sweet and tangy flavour, the combination of sake, sugar, and soy sauce delivers a sharp kick of sour and umami.
This recipe is less traditional but equally as tasting. We’ve added garlic, lemon juice, and ginger to the sauce for added flavour.

- 80 80 ml water
- 1 1 tsp garlic granules
- 0.5 0.5 tsp ground ginger
- 30 30 g soft brown sugar
- 0.5 0.5 tbsp cornflour
- 2 2 tbsp gluten-free soy sauce or tamari
- 0.5 0.5 tsp lemon juice
- 282.5 282.5 g organic young jackfruit, drained and cut into chunks
- To serve
- cooked rice
- 0.5 0.5 carrot, finely sliced or julienned
- 0.5 0.5 red chilli, deseeded and finely sliced
- fresh spinach
- sesame seeds
Method
- To make the teriyaki sauce, add the water, cornflour, garlic granules, soy sauce, ginger, lemon juice, and brown sugar to a saucepan over medium heat.
- Bring the mixture to a boil, whilst whisking well to ensure there are no lumps. Once the sauce has thickened remove it from the heat.
- Heat a frying pan over a medium-high heat and add the jackfruit chunks. Fry the chunks over a dry heat to brown them on all sides.
- Once the jackfruit is browned add the teriyaki sauce to the pan and cook for another 2-3 minutes.
- Serve the jackfruit alongside a bed of cooked rice, fresh spinach leaves and some finely sliced carrot.
- Garnish with a sprinkle of sesame seeds and fresh, sliced chilli to finish.
