Crafting your own pastry might sound daunting, but fear not! With just 10 minutes of preparation and 20 minutes for the pastry to rest, you’ll be well on your way to creating a flaky, melt-in-your-mouth crust that perfectly complements the rich, spiced mincemeat filling.

These vegan mince pies take just 10 minutes to prep and 30 minutes to cook, so they’re easy to whip up on short notice.

When selecting a mincemeat just be sure to check the label, as traditional mincemeat contains beef suet.

  • 33.333333333333 33.333333333333 g plain flour
  • 15 15 g dairy-free butter, cubed
  • 12.5 12.5 g icing sugar
  • 50 50 g vegan mincemeat
  • 0.33333333333333 0.33333333333333 Tbsp soya milk
  • You will also need:
  • 0.16666666666667 0.16666666666667 x 6-hole muffin tin

Method

  1. Preheat the oven to 180°C/355°F/Gas 4. To make the pastry, add the flour, butter and icing sugar to a food processor and pulse until the mixture resembles breadcrumbs.
  2. Transfer mixture to a large bowl and bring together with your hands, being careful not to overwork the pastry. If the pastry seems too wet add a little more flour, if it’s too dry add a little water. Once pastry is formed, wrap in cling film and refrigerate for 20 minutes.
  3. Remove pastry from fridge and roll out 4-5mm thick. Line the inside of the muffin tins, then fill the pastry with the mincemeat. With a pastry cutter, cut out stars from the remaining pastry, and place these on the top, brushing with the milk to glaze. Place into the oven for 25-30 minutes until the pastry is cooked through and crisp.
