Are these vegan lentil blondies healthy? 

As with most sweet treats, these blondies should be enjoyed in moderation as part of a balanced diet.

But they do contain some nourishing ingredients offering plenty of health benefits, particularly in comparison to regular shop-bought brownies and blondies!

Lentils aren’t just a great source of protein, they also provide gut healthy fibre and folic acid.

Peanut butter is also a great source of protein, fibre, and vitamins. Opt for a whole nut peanut butter with no added sugar or oil to reap all the health benefits of peanuts.

Maple syrup is high in sugar, but is a more natural source than refined sugars.

  • 12.5 12.5 g red lentils, cooked as per packed instructions
  • 10 10 g maple syrup
  • 15 15 g peanut butter
  • 0.125 0.125 tsp vanilla extract
  • 0.0625 0.0625 tsp baking powder
  • 0.75 0.75 Tbsp coconut flour
  • 0.125 0.125 Tbsp soya milk

Method

  1. Preheat the oven to 180°C/355°F/Gas 4.
  2. To a blender, add the lentils, maple syrup, peanut butter, vanilla extract, baking powder, coconut flour and milk, then blend until
    smooth.
  3. Transfer to a lined baking tray and place in the oven to bake for 20-25 minutes, until the edges are starting to brown. Allow to cool before cutting.
