A decadent topping of melted dark chocolate, mini vegan marshmallows, and fresh sliced strawberries make this vegan bake much more than just a cookie.

Vegan cookie pizza is the perfect party dessert: fun to share and delicious to eat.

It’s a decadent treat served fresh from the oven, but can also be made ahead of time and enjoyed cold.

How to serve vegan cookie pizza:

This is a great sharing dessert that can be eaten warm or cold.

Serve with cream or vegan ice cream, or simply enjoy a slice by itself.

The sliced cookie pizza also makes a great alternative to regular cookies, and tastes great with a hot drink.

Alternative toppings for cookie pizza:

If chocolate and strawberries aren’t your thing, try adding freeze-dried raspberries and white vegan chocolate for a sweeter alternative.

You could also skip the fruit, and make a chocoholics dream with different kinds of melted vegan milk chocolate, dark chocolate chunks, and vegan white chocolate shavings.

Alternatively, break up your favourite vegan chocolate bar instead of the dark chocolate chunks.

If you like cookies on your cookie, try adding a drizzle of Lotus Biscoff sauce (or melted biscuit spread), and top with crumbled Oreo cookies.

Or, create a fruit salad cookie pizza by topping with coconut cream, lots of fresh fruit and a sprinkle of desiccated coconut. You could even fold a handful of dried fruit into your cookie dough before baking for an extra-fruity treat.

  • For the base
  • 0.125 0.125 Tbsp ground flaxseed
  • 0.3125 0.3125 Tbsp water
  • 18.75 18.75 g plain flour
  • 18.75 18.75 g oats
  • 15.625 15.625 g dairy-free butter
  • 18.75 18.75 g Demerara sugar
  • For the topping
  • 10 10 g dark chocolate, grated
  • 10 10 g vegan marshmallows
  • 0.5 0.5 strawberries, sliced

Method

  1. Preheat the oven to 180°C/350°F/Gas 4. Mix together the flaxseed and water. Add this, plus the other ingredients for the base to a bowl and beat together.
  2. Shape the cookie dough into roughly a 9-inch circle,
    and place on a lined baking tray. Cook for 25-30 minutes until cooked through.
  3. Sprinkle with 60g of the dark chocolate and 60g of the marshmallows and place under the grill until the chocolate is melted and the marshmallows are toasted.
  4. Top the pizza with strawberries and the remaining chocolate and marshmallows.
