How to make vegan ‘nice cream’
‘Nice cream’ is the name given to the easiest type of vegan ice cream to make. And it can be as simple as just blitzing up frozen bananas in a blender until smooth.
It’s a great way to avoid wasting old bananas, as riper bananas make a sweeter, creamier nice cream.
First, slice up your bananas and place them in an airtight container in the freezer. You can keep a stash of frozen banana slices in your freezer ready to whip up a batch of nice cream when you need a treat.
Next, add your frozen bananas to a blender with your choice of flavours and add ins. You may prefer to add a sweetener, like maple syrup, or just let the fruit flavours shine through. Any ingredients you want to keep chunky, like fruit, nuts, or the chocolate chips in this recipe, should be kept aside for later.
Add some water to help your frozen ingredients blend smoothly. Then, blend your nice cream ingredients until creamy and scoopable.
Finally, stir in your extra ingredients. Your nice cream can be eaten immediately, or stored in the freezer until needed.
Nice cream can go very solid in the freezer, so you’ll need to take it out of the freezer at least 10 minutes before serving.

- 1 1 bananas, peeled and chopped
- 58.333333333333 58.333333333333 g frozen pitted cherries
- 0.33333333333333 0.33333333333333 Tbsp maple syrup
- 0.33333333333333 0.33333333333333 tsp vanilla extract
- 16.666666666667 16.666666666667 g dairy-free dark chocolate, chopped
Method
- Place the chopped bananas in a tub or bag and freeze overnight until solid.
- Add all the ingredients, except the chocolate, to a high-powered blender with 60ml of water and pulse to break the fruit up. Scrape down the sides and blend in quick blasts, until smooth. Add a splash more water if necessary.
- Stir the chocolate through the mixture until evenly distributed. Serve immediately or transfer to a container and freeze until needed.
