This refreshing vegan sorbet is a great end to a romantic meal. The mint will freshen your breath and the watermelon’s high citrulline content gives it aphrodisiac properties.

Serve your watermelon and mint sorbet simply in a bowl, or decorate with watermelon slices and sprigs of fresh mint.

This sorbet is also great served in a bowl or a cone as a treat on a hot summer’s day.

How to make vegan sorbet:

Making sorbet is usually an easy process, using simple ingredients. Most sorbet recipes involve a simple sugar syrup mixed with fruit purée then chilled and churned.

Using real sugar is important for sorbet as it doesn’t just sweeten the mixture, it also provides structure as the suspension of the sugar through your fruit purée helps it to become creamy and light, rather than just a lump of frozen fruit.

This recipe suggests taking your sorbet out of the freezer to stir every hour or so, but you can also make this sorbet in an ice cream maker.

Churning the sorbet during the freezing process helps to keep it light and soft, but it will still be prone to go hard when stored in the freezer after it’s set.

Take care when ordering sorbet in shops and restaurants, as some recipes include egg whites to keep the sorbet’s texture light and fluffy.

Recipe tip:

For the best results when making your watermelon purée, remove as many seeds as possible from the flesh of your watermelon and cut it into cubes before weighing out the amount you need (you can always snack on any leftover cubes!)

The appropriately named watermelon contains plenty of liquid, so your shouldn’t need to add any additional water to this recipe like you might with some other fruit sorbets.

  • 200 200 g watermelon
  • 0.5 0.5 sprig fresh mint
  • 25 25 g caster sugar

Method

  1. In a high-speed blender, blend the watermelon until fully puréed. Add all of the ingredients to a saucepan over a low heat and keep stirring until all the sugar has dissolved.
  2. Remove from the heat and pass the liquid through a sieve, discarding the pulp and mint. Put the liquid into the freezer to set, removing and stirring every hour to ensure no large lumps of ice have formed.
  3. Once set, serve immediately. If you are making ahead of time, allow the sorbet 10 minutes out the freezer before serving to allow easy scooping.
