This decadent dark chocolate and peanut butter dessert is rich and creamy, while still being healthier than its non-vegan counterpart.

The use of tofu in place of whipped cream makes this dessert lower in fat, higher in protein, and still really thick and creamy!

Does mousse contain gelatine?

This one doesn’t! While many mousse recipes call for gelatine to set the mixture firm, it’s not necessary for this vegan mousse – and you don’t even need to use a vegan substitute like agar agar!

The reason is that the consistency of peanut butter and melted chocolate mean that they firm up as they cool, and will set the mixture on their own when chilled in the fridge. The end result is slightly smoother and softer than a gelatine-set dessert, but it also gives a creamy texture that works perfectly with these flavours.

How do I make sure my ingredients are vegan?

The good news is both dark chocolate and peanut butter are almost always vegan by default, so you should have no problem finding ingredients to make this delicious vegan mousse.

When selecting a dark chocolate, pick one with minimum 70% cocoa solids for this recipe and look out for milk in the ingredients.

Peanut butter can be a little trickier if you also choose to avoid palm oil, but there are palm oil-free options available in most supermarkets. Peanut butters without added oil can be a little thicker in consistency, so you may need to warm the peanut butter to melt it slightly before blending with the tofu. This has the added bonus of setting a little firmer when the mousse chills.

With both chocolate and peanut butter take extra care if choosing varieties that have extra added ingredients or flavour. Some types of peanut butter may be sweetened with honey, while certain dark chocolates can contain add-ins which include milk, egg, or even shellac.

  • For the chocolate mousse
  • 25 25 g dark chocolate
  • 37.5 37.5 g silken tofu
  • 0.25 0.25 tsp maple syrup
  • For the peanut butter mousse
  • 0.5 0.5 tbsp peanut butter
  • 37.5 37.5 g silken tofu
  • 0.5 0.5 tsp maple syrup

Method

  1. Melt the dark chocolate in a glass bowl over a saucepan of boiling water (don’t let the bottom of the bowl touch the water).
  2. Add the melted chocolate, silken tofu and maple syrup to a food processor and blend until smooth. Pipe this mixture into four glasses and place in the fridge to set.
  3. Blend the peanut butter, silken tofu and maple syrup together in a blender and blend until smooth. Pipe this mixture onto the chocolate mousse and place back into the fridge to set for 3-4 hours.
