Can I cook this when it’s not barbecue season?
Absolutely! If it’s a bit too cold and rainy to stand out in the garden, you can cook this cauliflower dish in your kitchen instead.
You could cook the marinated cauliflower florets under the grill, in the oven, or in an airfryer. You won’t quite get that authentic, smoky taste as you would from the barbecue, but the flavour will still be delicious!

- 0.5 0.5 tsp curry powder
- 0.25 0.25 tsp cumin seeds
- 0.25 0.25 tsp turmeric powder
- 0.125 0.125 tsp garlic granules
- 0.125 0.125 tsp ground fenugreek
- 0.5 0.5 tbsp oil
- 0.25 0.25 tsp lemon juice
- 0.25 0.25 tbsp maple syrup
- 0.25 0.25 cauliflower, cut into florets
- 0.5 0.5 tbsp cashews, toasted
- 0.5 0.5 tbsp sultanas
- 0.25 0.25 handful fresh coriander, chopped
Method
- Mix together the curry powder, cumin seeds, turmeric, garlic granules, fenugreek, oil, lemon juice and maple syrup to make the marinade. Coat the cauliflower in the marinade and leave for 30 minutes.
- To cook the cauliflower, place the florets onto the BBQ for 4-5 minutes on each side and cook until tender. Mix these with the cashews, sultanas and coriander to finish.
