This lovely light and refreshing vegan mint chocolate avocado mousse is incredibly smooth and silky and is a great dessert option for those looking for a healthier sweet treat.

- 75 75 g avocado
- 0.5 0.5 large banana, ripe
- 17.5 17.5 g dark vegan chocolate, melted (plus extra for garnish)
- 0.5 0.5 Tbsp raw cacao powder
- 0.5 0.5 Tbsp mint extract
- 0.5 0.5 Tbsp plant milk (room temperature)
- 0.5 0.5 Tbsp maple syrup, optional
- 1 1 Tbsp coconut yoghurt
- 0.5 0.5 handful of mixed berries
Method
- Melt the chocolate and add to a small food processor or blender with the Pure Avocado, banana pieces, cacao powder and mint and blend until smooth and creamy. Add the milk to thin, if necessary. Taste and add the maple syrup if desired, and add more mint if needed.
- Spoon into two small bowls, top with the coconut yoghurt, some berries and extra chopped chocolate. Enjoy straight away. Or leave in the fridge covered and add the yoghurt and toppings just before serving.
