What is pea soup?
Pea soup has been a staple in many areas for a number of years.
It first originated in Ancient Greece and Ancient Rome, being a super easy soup to create with simple ingredients.
This pea soup is earthy, but the refreshing hit of mint lightens up these flavours.
Both peas and spinach contain lots of fibre and antioxidants, so this soup is great for a light detoxing meal.
What can I serve pea, spinach and mint soup with?
This pea soup can be served with a sprinkling of nutritional yeast, which is a great vegan alternative to parmesan.
Nutritional yeast is the perfect topping for any soup, but really adds some dimension to this simple dish.
If you want to bulk up this meal, warm crusty bread makes the perfect side to this soup. Baguette or rye bread are great bread options to go with this dish.

- 0.25 0.25 tbsp olive oil
- 0.5 0.5 tbsp mint leaves
- 0.25 0.25 onion, diced
- 0.5 0.5 cloves garlic, puréed
- 15 15 g spinach
- 75 75 g peas
- 180 180 ml gluten-free vegetable stock
Method
- In a large saucepan over medium heat, add the oil, mint, onion and garlic and cook for 3-4 minutes until the onion is softened.
- Add the spinach and cook for a further 2-3 minutes until fully wilted down.
- Add the peas and stock and bring to a boil. Let the soup simmer for 15 minutes before blending using a food processor or stick blender.
- Season to taste before serving.
