A Canadian startup has debuted its ‘whole-cut’ vegan salmon filet, which ‘looks, cooks, tastes, and flakes’ like real fish.

New School Foods says it has successfully managed to ‘recreate the structure’ of wild salmon, using ‘scaffolding technologies’.

The company says its plant-based fish emulates the same ‘aligned fibres, connective tissue, and fats’ as real salmon.

It also ‘transitions from raw to cooked’ and tastes just like the real deal thanks to ‘proprietary flavour technology’.

New School Foods’ plant-based salmon is high in protein and matches the same level of Omega-3 as wild salmon.

The startup has successfully raised US$12m in funding which it will used to build a test facility where it can work on scaling up its scaffolding technology, as well as expanding its team of food scientists.

‘Unlike anything else we’ve seen’

According to reports, Nick Cooney, General Partner at Lever Ventures – a protein investment company – said: “Their technology is unlike anything else we’ve seen in the industry in terms of truly mimicking the texture, mouthfeel, and experience of cooking and eating whole cuts of meat.”

Speaking to Oddity Central, CEO and Founder of New School Foods Chris Bryson explained how the ‘next frontier of meat alternatives’ will be whole-cuts.

He added: “What’s generally available for consumers now are rubbery, ground, pre-cooked products that will not convince the average customer to change their lifelong habits.”

New School Foods is expected to launch its vegan salmon alternative in restaurants across North America in 2023 as part of a chef-only pilot program.
