These vegan peanut butter blondies make a great dessert or can even work as a post-workout refuel snack thanks to their high protein content.

They’re made with wholesome, natural ingredients for a whole food plant based alternative to sugary snacks.

What are blondies? 

Blondies are a lot like brownies, but paler in colour and more delicate in flavour.

Both bakes have gooey, chewy textures, but blondies get their flavour from vanilla and brown sugar (or, in this case, maple syrup), while brownies use chocolate and cocoa powder.

Are these vegan peanut butter blondies healthy?

In comparison to regular store-bought blondies, these are generally healthier – while still being tastier!

Their main ingredient is chickpeas, which means they are much higher in protein and fibre, and lower in starchy carbs than blondies made with wheat flour.

These vegan peanut butter blondies are sweetened by maple syrup and dates so they’re not exactly low in sugar, but they’re not full of refined sugars like mass-produced brownies or blondies.

They also contain ground almonds, cashews, and peanut butter for a nutritiously nutty boost.

And, as a bonus, these blondies are suitable for gluten-free diets – as long as you ensure that ingredients like the peanut butter and baking powder are not at risk of cross-contamination.

  • 50 50 g tinned chickpeas, drained
  • 10 10 g maple syup
  • 15 15 g peanut butter
  • 0.125 0.125 tsp vanilla extract
  • 0.0625 0.0625 tsp gluten-free baking powder
  • 0.25 0.25 Tbsp ground almonds
  • 0.125 0.125 Tbsp almond milk
  • 6.25 6.25 g chopped cashews
  • 6.25 6.25 g chopped dates

Method

  1. Preheat the oven to 180°C/355°F/Gas 4. Add the chickpeas, maple syrup, peanut butter, vanilla extract, baking powder, ground almonds and milk to a blender and blend until smooth.
  2. Transfer the mixture to a bowl and fold in the cashews and dates. Then transfer the mixture to a lined baking tray and place in the oven to bake for 20-25 minutes, until the edges are starting to brown. Allow to cool before cutting.
