This crumble is the perfect British dessert – it’s both sweet and crunchy, courtesy of the plum filling and crumbly oat and quinoa topping.

What is a crumble?

A crumble is usually a fruit-based dessert topped with a crunchy layer.

Although this dish is most often sweet, a crumble can also be made savoury.

Crumbles became popular in Britain at the time of the Second World War as an economical alternative to pies.

The dish is aptly named after its brittle layer, which commonly consists of butter, flour and sugar. In our vegan version, we’ve modified the traditional crumble topping to merge together coconut flour, oats, sugar, vegan butter and quinoa, which results in a perfect crispy texture.

What is quinoa?

Quinoa is a seed that is completely gluten-free and has lots of nutritional benefits, being a great source of plant protein and fibre.

You might think of quinoa as being similar to couscous or rice. It’s often used in salads, wraps and buddha bowls but in this recipe, it makes the ideal healthy crunchy topping for our plum crumble.

You can make the following dish completely gluten free just by using gluten-free oats instead of standard. The quinoa is already gluten-free, as are the rest of the ingredients in this dish.

How can butter be vegan?

Vegan butter is a life saver for those trying to replicate dairy recipes in a plant-based friendly way.

Vegan butter is different to margarine, having a firmer texture which is needed for the recipe below in order to replicate that crumbly consistency. Dairy-free butter also helps the crumble to bake more evenly in the oven.

  • For the filling:
  • 100 100 g plums, quartered and stoned
  • 15 15 g coconut sugar
  • 0.25 0.25 tsp mixed spice
  • 0.25 0.25 Tbsp water
  • For the crumble topping:
  • 18.75 18.75 g coconut flour
  • 15 15 g quinoa, cooked
  • 7.5 7.5 g oats (can use gluten-free if preffered)
  • 7.5 7.5 g coconut sugar or soft brown sugar
  • 0.25 0.25 tsp mixed spice
  • 7.5 7.5 g dairy-free butter

Method

  1. To make the filling, add the plums, sugar, mixed spice and water to a saucepan and cook over a medium heat for 5-6 minutes until the plums have softened and are beginning to stew down.
  2. Preheat the oven to 200°C/400°F/Gas Mark 6, then add the coconut flour, quinoa, oats, soft brown sugar, mixed spice and dairy-free butter to a bowl and mix until fully combined and the mixture resembles coarse breadcrumbs.
  3. Next, add the plum mixture to an ovenproof dish and spread evenly, then sprinkle the crumble mixture over the plums.
  4. Place into the oven to bake for 20-25 minutes until the top starts to brown.

Each 175g serving provides:

9.5g Fat, 4g Saturates, 46g Carbohydrate, 35g Sugars, 10g Fibre, 2.7g Protein, 0.17g Salt.
