This vegan and gluten free chocolate fudge is made from simple ingredients and is quick and easy to make, with no need for a sugar thermometer!

The fudge is rich and indulgent, with a crunchy texture from the pecans and almonds. The addition of chia seeds provides a nutritious boost of omega-3 fatty acids, fibre, and protein.

How can I use this fudge?

This fudge makes a great snack to satisfy your sweet tooth, and is a perfect treat to enjoy with family and friends during special occasions or as an indulgent dessert after a meal.

Chocolate chia fudge also makes a great gift. It’s beautiful as it is, but you can elevate it further by adding decorative toppings such as extra chopped nuts, edible gold or silver leaf, or drizzles of melted vegan chocolate.

You could also package the fudge in a cute gift box or bag with some ribbon or a personalised gift tag, or even include a package of it in a larger vegan gift hamper.

Which nut butter should I use for this recipe?

You can use any nut butter you like for this vegan chocolate fudge, so pick your favourite or just use what you already have in your cupboard.

Flavour and texture are the main differences you’ll find when choosing different nut butters. Peanut butter will give a classic ‘peanut butter cup’ flavour, while a mixed nut butter will give a more complex, earthy flavour. Cashew or macadamia nut butters are likely to be a little creamier than others.

The type of nut butter you choose can also affect the nutritional value of your fudge. Almond butter tends to have a higher protein content than other nut butters, while walnut butter is likely to be higher in omega 3.

You could also make your fudge suitable for nut allergy sufferers by omitting the whole nuts and substituting a sunflower seed butter for nut butter. Just make sure you don’t use a margarine-style ‘sunflower spread’ instead!

  • 160 160 ml coconut milk
  • 300 300 g dark chocolate
  • 2 2 tsp coconut oil
  • 1 1 Tbsp nut butter
  • 2 2 Tbsp pecans, chopped
  • 2 2 Tbsp flaked almonds
  • 2 2 Tbsp chia seeds
  • 1 1 Tbsp maple syrup

Method

  1. Bring the coconut milk to a simmer and add the chocolate, coconut oil and nut butter.
  2. Remove from the heat and add the rest of the ingredients, stir until thickened.
  3. Pour into a tin and let it cool slightly. Set in the refrigerator for 2 hours.
