Vegan Pea & Sweetcorn Fritters

These fritters are a great way to get vegetables into children. They are super easy to make and can be used as a side dish or as the main focus to a meal.

*A flax egg can be made by mixing 1 tbsp of ground flax seed mixed with 2 tbsp of water.
What is a flax egg?
A flax egg is a vegan egg alternative made by combining ground flax seed with water.
Once combined, the mixture should be left for 5 minutes to allow the flax seeds to expand. This makes the mixture thicker and gives it a gluey texture, helping bind together your cakes or bakes.
Why are my corn fritters soggy?
Soggy fritters are far from pleasant but are unfortunately common. One of the biggest causes of a soggy fritter is too much batter, too much filling, and the ingredient seeping excess water.
When preparing the fresh ingredients, be sure to remove as much excess water as possible. If using frozen ingredients, allow food to thaw out and dry with a paper towel.
Avoid adding too much filling or batter to the fritter, this will make it difficult for the oil to fry the fritter and rather it will simply absorb into the fritter causing it to be soggy.

- 25 25 g plain flour
- 0.25 0.25 flax egg*
- 0.25 0.25 tsp baking powder
- 25 25 ml plant-based milk
- 50 50 g mixed sweetcorn and peas
- 0.5 0.5 spring onions, sliced
- 0.5 0.5 tsp wholegrain mustard
- 0.5 0.5 tsp nutritional yeast
- salt and pepper, to taste
- a little oil, for frying
- To serve
- 0.25 0.25 tbsp dairy-free yoghurt, per person
Method
- Sieve the flour and baking powder into a large bowl. Add the flax egg and non-dairy milk and mix well.
- Stir in the peas, sweetcorn and spring onion, mustard and nutritional yeast and mix until well combined.
- Season to taste with salt and pepper.
- Heat a little oil in a frying pan and add a heaped tablespoon of the fritter batter. Press down gently with a spatula and repeat until the frying pan is full.
- Fry the fritters on medium heat for approximately 5 minutes on either side or until they are golden brown and cooked through.
- Serve immediately with a little yoghurt.
