- 50 50 g split red lentils
- 5 5 g grated ginger
- 0.5 0.5 fresh garlic cloves, crushed, chopped or grated
- 1 1 Tbsp sunflower oil
- 0.25 0.25 Tbsp Madras curry powder
- 25 25 g creamed coconut
- 10 10 g chopped fresh coriander
- 0.5 0.5 tsp salt
Method
- Sauté the garlic and ginger in the oil.
- Add and fry the Madras curry powder.
- Now add the lentils and fry them briefly.
- Reduce the heat and add 1 litre water and the coconut.
- Continue cooking on a low heat until the lentils dissolve (around 30 minutes).
- Remove from the heat, then add the salt and coriander.
- As good cold on toast as it is hot over rice.
