  • 50 50 g split red lentils
  • 5 5 g grated ginger
  • 0.5 0.5 fresh garlic cloves, crushed, chopped or grated
  • 1 1 Tbsp sunflower oil
  • 0.25 0.25 Tbsp Madras curry powder
  • 25 25 g creamed coconut
  • 10 10 g chopped fresh coriander
  • 0.5 0.5 tsp salt

Method

  1. Sauté the garlic and ginger in the oil.
  2. Add and fry the Madras curry powder.
  3. Now add the lentils and fry them briefly.
  4. Reduce the heat and add 1 litre water and the coconut.
  5. Continue cooking on a low heat until the lentils dissolve (around 30 minutes).
  6. Remove from the heat, then add the salt and coriander.
  7. As good cold on toast as it is hot over rice.
