Coconut Sweet Potato Lentil Soup with Rice

Although we may be thinking longingly of salads, soups are just so practical right now in the current climate where we’re looking for recipes we can make it bulk using simple storecupboard ingredients. Not only is this hearty soup wonderfully filling and nutritious, but it also contains lots of ingredients that help to promote brain health, which is especially beneficial during isolation when we all need a bit more brain juice!

- 0.083333333333333 0.083333333333333 yellow onion, chopped
- 0.16666666666667 0.16666666666667 inch fresh ginger, grated
- 0.33333333333333 0.33333333333333 cloves garlic, minced
- 0.33333333333333 0.33333333333333 sweet potatoes, peeled and cubed
- 0.16666666666667 0.16666666666667 Tbsp yellow curry powder
- 0.083333333333333 0.083333333333333 tsp cayenne pepper, more or less to taste
- 158.33333333333 158.33333333333 ml low-sodium vegetable broth or water
- 25 25 g dried red lentils
- pinch of salt
- 0.16666666666667 0.16666666666667 can coconut milk
- 75 75 g spinach
- 83.333333333333 83.333333333333 g cooked basmati rice
- 2.5 2.5 g fresh cilantro, chopped, plus more for serving
Method
- Heat the olive oil in a large pot over medium heat. When the oil shimmers, add the onion and cook 5 minutes until soft. Add the ginger, garlic, and sweet potatoes and cook until fragrant, about 2 minutes. Stir in the curry powder and cayenne and cook another minute.
- Add the broth and lentils. Season generously with salt. Bring the mix to a boil over high heat, then reduce the heat to low. Cover and simmer 15-20 minutes, until the lentils are soft and the sweet potatoes tender.
- Stir in the coconut milk and spinach, cook 5 minutes. Remove from the heat and add the cilantro.
- To serve, divide the rice among bowls and ladle the soup overtop. Garnish with cilantro. Serve with Naan on the side. Enjoy!
