French toast is classically made with eggs and milk, but this combination of soya milk and gram flour makes a great substitute.

What is French toast?

The UK equivalent of French Toast has traditionally been ‘eggy bread’, which is usually a savoury dish served at breakfast.

French toast has started to become popular in the UK in its own right though, and is predominantly accompanied by something sweet, for example fruit or smothered in chocolate spread.

This recipe obviously ignores the addition of egg completely, using a mix of soy milk and gram flour instead and boosting the sweetness with the addition of nutmeg, cinnamon and vanilla.

What is gram flour?

Widely used in Indian cooking, this flour is made by grinding chickpeas, known in a number of Asian countries as ‘gram’.

When mixed with an equal proportion of water, it can be used as an egg replacement in baking and cooking.

Gram flour can be made from either raw or roasted gram beans. The roasted variety is more flavourful, while the raw variety has a slightly bitter taste.

Gram flour can be used in gluten-free recipes as although it’s called a flour, it contains no wheat or gluten.

Variations

For seasonal variations, swap the strawberries out for whichever fruit is best at that time of year.

  • For the poached strawberries
  • 20 20 ml water
  • 19.166666666667 19.166666666667 g caster sugar
  • 1/2 tsp vanilla extract
  • 0.16666666666667 0.16666666666667 tsp ground cinnamon
  • 66.666666666667 66.666666666667 g fresh strawberries
  • For the French toast
  • 40 40 ml soya milk
  • 8.3333333333333 8.3333333333333 g gram flour
  • 0.16666666666667 0.16666666666667 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 6-8 slices bread
  • 0.33333333333333 0.33333333333333 tbsp coconut oil, for frying

Method

  1. For the poached strawberries, add the water, sugar, vanilla and cinnamon to a small saucepan and bring to a boil. Once boiling, remove from the heat and add the strawberries, making sure they are fully submerged. Leave to cool down.
  2. For the French toast, whisk together the soya milk, gram flour, maple, vanilla, cinnamon and nutmeg. Pour this into a shallow tray, then lay the bread in the batter and leave for one minute, before flipping over for another minute to allow the bread to absorb the mixture.
  3. To cook the French toast, heat the coconut oil in a frying pan over medium heat, then add the bread and fry for 2-3 minutes on each side until golden and the batter is cooked through. Top the French toast with the poached strawberries. Drizzle with the poaching syrup to serve.
