This recipe for avocado toast is the ultimate breakfast companion. It features a flavourful crushed avocado with an extra nutrient boost from nutritional yeast, along with a beautiful fan of creamy avocado slices and an extra dimension of sweetness and vitamin C from the cherry tomatoes.
The vegan bacon bits are the ‘icing on the cake’ of this dish. Made from crumbled firm tofu, they’re full of smoky sweet flavour and can even be made ahead of time to speed up your breakfast prep!

- For the crushed avocado
- 0.5 0.5 avocado
- 0.5 0.5 tbsp lemon juice
- 0.5 0.5 tbsp nutritional yeast
- For the bacon bits
- 50 50 g extra firm tofu, crumbled
- 0.5 0.5 tbsp soy sauce
- 0.5 0.5 tsp liquid smoke
- 0.5 0.5 tsp smoked paprika
- 0.5 0.5 tsp maple syrup
- 1 1 tsp vegetable oil
- To serve
- 1 1 slices toast
- 0.25 0.25 avocado, peeled and sliced
- 2 2 cherry tomatoes, quartered
Method
- For the crushed avocado, add the avocado, lemon juice and nutritional yeast to a bowl and crush with a fork until combined but still with lumps, season to taste.
- Next, for the bacon bits, mix the tofu pieces with the soy sauce, liquid smoke, smoked paprika and maple syrup and allow to marinade for 30 minutes. Then heat the oil in a frying pan over a medium-high heat, and fry the tofu pieces for 4-5 minutes until crispy.
- To serve, top the toast with the crushed avocado, sliced avocado, cherry tomatoes and bacon bits.
