Avocado toast is a delicious breakfast staple! It’s perfect as a light brunch, or as an energising weekday breakfast.

This recipe for avocado toast is the ultimate breakfast companion. It features a flavourful crushed avocado with an extra nutrient boost from nutritional yeast, along with a beautiful fan of creamy avocado slices and an extra dimension of sweetness and vitamin C from the cherry tomatoes.

The vegan bacon bits are the ‘icing on the cake’ of this dish. Made from crumbled firm tofu, they’re full of smoky sweet flavour and can even be made ahead of time to speed up your breakfast prep!

Which bread should I use for my toast?

The beauty of this recipe is that it will taste delicious with any bread you choose. From a thin, square slice of white toast to an artisan sourdough wedge, this tasty topping will make your bread shine.

We think this avocado toast recipe tastes great with a grainy granary bread. A big, hearty slice works best, but two small slices will also make a delicious and filling breakfast.

If you’re gluten free, this recipe can be too! Just opt for a gluten-free bread, and make sure you use gluten-free soy sauce for the vegan bacon bits.

Picking a vegan gluten-free bread can be a bit trickier, as shop-bought breads often use eggs or milk in the recipe to help keep the bread fluffy. Read the labels carefully, or go the extra mile and make your own vegan and gluten-free brown bread at home!

Is avocado toast healthy? 

Avocado can be very good for you! They’re packed with nutrients, and provide both protein and fibre. They’re also linked with lower cholesterol and reduced risk of heart disease.

Avocados are full of good fats and can help you to absorb fat-soluble vitamins – like vitamin A found in cherry tomatoes, and vitamin D that may be in some fortified breads.

By combining avocado with filling complex carbs from the bread and lean protein from tofu, this recipe makes for a well-rounded and nutritious meal!

  • For the crushed avocado
  • 0.5 0.5 avocado
  • 0.5 0.5 tbsp lemon juice
  • 0.5 0.5 tbsp nutritional yeast
  • For the bacon bits
  • 50 50 g extra firm tofu, crumbled
  • 0.5 0.5 tbsp soy sauce
  • 0.5 0.5 tsp liquid smoke
  • 0.5 0.5 tsp smoked paprika
  • 0.5 0.5 tsp maple syrup
  • 1 1 tsp vegetable oil
  • To serve
  • 1 1 slices toast
  • 0.25 0.25 avocado, peeled and sliced
  • 2 2 cherry tomatoes, quartered

Method

  1. For the crushed avocado, add the avocado, lemon juice and nutritional yeast to a bowl and crush with a fork until combined but still with lumps, season to taste.
  2. Next, for the bacon bits, mix the tofu pieces with the soy sauce, liquid smoke, smoked paprika and maple syrup and allow to marinade for 30 minutes. Then heat the oil in a frying pan over a medium-high heat, and fry the tofu pieces for 4-5 minutes until crispy.
  3. To serve, top the toast with the crushed avocado, sliced avocado, cherry tomatoes and bacon bits.
