How to make vegan caramel
To conjure the mesmerising vegan caramel, combine caster sugar, golden syrup, cider vinegar, and water in a saucepan over medium heat. Stir until the sugar dissolves, then let it simmer without stirring.
For the perfect toffee texture, use a candy thermometer; when it reaches 150°C (300°F), remove it from the heat. Add a few drops of red food coloring and swirl. Remember, molten caramel is scorching, so handle with care!

- 1 1 apples
- 50 50 g caster sugar
- 0.125 0.125 tsp cider vinegar
- 0.5 0.5 Tbsp golden syrup
- 20 20 ml water
- few drops red food colouring
- You will also need:
- 1 1 lolly sticks
Method
- Push a lolly stick into the stalk-end of each apple, ensuring it is in firmly.
- Next, add the caster sugar, cider vinegar, golden syrup, water and food colouring. Bring to a simmer and cook until the sugar has dissolved. Then allow to boil until the temperature of the toffee is 150°C. Remove from the heat.
- Quickly dip the apples into the toffee until coated, and place the coated apples onto a sheet of non-stick paper. Allow to cool.
