  • For the soup:
  • 0.33333333333333 0.33333333333333 Tbsp vegan butter
  • 0.16666666666667 0.16666666666667 head broccoli, broken into florets and stalk finely sliced
  • 0.5 0.5 large potatoes, peeled and cubed
  • 0.16666666666667 0.16666666666667 large onion, peeled and diced
  • 0.33333333333333 0.33333333333333 leeks, trimmed, washed well, and sliced
  • 0.5 0.5 cloves garlic, peeled and chopped
  • 33.333333333333 33.333333333333 g spinach, washed
  • 0.16666666666667 0.16666666666667 Tbsp vegan bouillon powder
  • 0.16666666666667 0.16666666666667 Tbsp vegan pesto
  • sea salt and black pepper to taste
  • 0.083333333333333 0.083333333333333 cup soy milk (optional)
  • To serve:
  • 1 1 Tbsp soy cream (optional)

Method

  1. Prepare all the vegetables, as above, before starting to cook.
  2. In a very large, lidded pan or flameproof casserole dish, melt the vegan butter over a medium heat.
  3. Add the onions, leeks and garlic to the pan and sauté gently for 5 minutes, until beginning to soften.
  4. Add the potatoes and broccoli and continue to cook, stirring occasionally, for another 5 mins.
  5. Season the vegetables with salt and pepper, add the stock powder and enough water to cover the ingredients by 1-2 inches.
  6. Stir everything together, bring to a simmer, cover with a lid and leave to cook for 10 minutes, or until the potatoes are tender.
  7. Add the vegan pesto, spinach and soy milk (if using) and use an immersion blender to puree the soup until very smooth.
  8. Adjust the seasoning to taste, adding a little more water or milk if the soup is too thick.
  9. Serve in warmed bowls, with a drizzle of soy cream, if using.
