Raw Vegan Breadsticks

What is a dehydrator?
A food dehydrator is a machine that removes moisture from food by operating at very low temperatures over a number of hours.
A lot of the machines use hot air to circulate and remove moisture, which is why many air fryers also now have a dehydrator function as they work in the same way. What is nori?
Nori is the Japanese name given to edible seaweed that has usually been dried.
Nori is loaded with vitamin B, Iodine, unsaturated Fatty acids, amino acids and anti-carcinogen.
It’s primarily used to wrap sushi, but now is making its way into many different dishes and is even being used as an alternative to crisps.

- 37.5 37.5 g flax seed
- 25 25 g ground almonds
- 0.75 0.75 tbsp dried goji berries
- 0.75 0.75 tbsp pumpkin seeds
- 1.25 1.25 sun-dried tomatoes
- 0.25 0.25 tbsp tamari
- 0.5 0.5 small apples
- 0.75 0.75 inch piece of cucumber
- 0.25 0.25 tbsp dried marjoram
- 0.25 0.25 tbsp herbes de Provence
- 1 1 cloves of fresh garlic
- 0.5 0.5 sheets of nori
- a pinch of dried oregano
- water (if needed)
Method
- Grind the flaxseeds and put them in a big bowl. Add the almonds and mix.
- Soak the goji berries and tomatoes for a few minutes. Use a food processor to mix rinsed goji, tomatoes and the rest of the ingredients apart from the nori until smooth, then mix with almonds and flaxseeds. Add some water if the dough is too dry.
- Form your breadsticks, making sure they are not too thin.
- Place in a dehydrator and dehydrate at 46 degrees for about 8 hours.
- When the breadsticks are finished, wrap each breadstick in half a sheet of nori, wetting the edge of the sheet of nori to make it adhesive so you can stick it together.
