A new dairy-free dessert is set to get foodies excited – cauliflower ice cream that is made in three tasty-sounding flavours and is available in New Zealand.
Called EatKinda, the new treat is partly the brainchild of Jenni Matheson – who was disappointed by the lack of delicious offerings when she went vegan in the early 2000.
However, a talented home cook herself, Jenni put her skills to the test and tried her hand at experimenting with sweet treats like cauliflower-based cheesecake, which then evolved into ice cream.
Her offerings caught the eye of (and tastebuds) of friends and family before, according to EatKinda’s website, ‘Jenni decided to pitch her plant-based ice cream idea at Startup Taranaki, where it caught the eye of Massey University student Mrinali Kumar, who was in the final days of her Bachelor of Food Technology’.
Mrinali came from a family who ‘mostly ate vegetarian food and she had spent late nights as a kid experimenting with baking cakes and biscuits that were dairy-free, egg-free and delicious’.
This means when the pair got together, and Mrinali tasted Jenni’s cauliflower ice cream, ‘they were onto something big. And EatKinda was born’.
