Flourless Vegan Mince Pie Brownies

This festive gluten-free and vegan baking recipe combines two of our favourite things – vegan brownies and mince pies! Never again will we have to choose between them with this fabulously festive vegan mince pie brownie recipe.

This vegan and gluten-free brownie recipe is perfect for the holidays. The combination of rich, dark chocolate with festive spices wrapped up in a fudgy brownie is heavenly!

These vegan brownies are best served with a glass of mulled wine or hot chocolate.

  • Wet ingredients:
  • 12.5 12.5 ml almond milk
  • 10 10 g vegan dark chocolate
  • 0.3 0.3 Tbsp almond butter
  • 0.2 0.2 tsp vanilla extract
  • 0.1 0.1 tsp almond essence
  • Dry ingredients:
  • 5 5 g coconut sugar
  • 10 10 g ground almonds
  • 4 4 g raw cacao powder
  • 0.1 0.1 tsp baking powder
  • 0.1 0.1 tsp allspice
  • 0.05 0.05 tsp bicarbonate of soda
  • Pinch of sea salt flakes
  • 15 15 g vegan mincemeat
  • 0.4 0.4 Tbsp dark chocolate chips (plus more choc chips to top)

Method

  1. Heat the oven to 180°C (350F) fan.
  2. With baking paper – Line the base and sides of a medium baking tray.
  3. Add the wet ingredients to a saucepan and gently heat to combine. Stir gently with a whisk to combine.
  4. Now add all the try ingredients to a large bowl, mix to combine.
  5. Transfer in wet mix into the dry, fold to combine. Now add the mincemeat and choc chips.
  6. Now spoon everything into the baking tray. Press into the sides.
  7. Sprinkle additional choc chips over the top.
  8. Bake for 25 minutes, then remove from the oven and allow to cool for at least an hr to cool and set.
  9. Slice and store in an airtight container for up to 4 days.
