This simple festive dessert is perfect for people who don’t like a traditional Christmas pudding. The richness of the chocolate is cut through by the addition of nuts, fruits and biscuits, and it’s topped with vegan white chocolate for extra sweetness.

- 30 30 g dark chocolate
- 10 10 g dairy-free butter
- 15 15 g golden syrup
- 15 15 g mixed dried fruit, chopped
- 15 15 g mixed chopped nuts
- 25 25 g vegan biscuits, crushed
- 10 10 g white chocolate
- To garnish (optional)
- holly leaves
- redcurrants
- You will also need
- 0.1 0.1 x 1 litre lined pudding mould
Method
- Add the dark chocolate, butter and golden syrup to a bain-marie and melt together until smooth, then add the dried fruits, chopped nuts and crushed biscuits and mix through well. Pour this into the lined pudding mould and put in the fridge to set overnight.
- Once set, take the pudding out of the mould, then melt the white chocolate and spoon over the top. Place back in the fridge for one hour to set, then garnish with the holly and redcurrants.
