  • For the ham:
  • 40 40 ml Vegetable stock
  • 0.16666666666667 0.16666666666667 tsp Smoked paprika
  • 0.5 0.5 Tbsp Smokey Bacon Nooch
  • 0.16666666666667 0.16666666666667 Tbsp Tomato ketchup
  • 0.083333333333333 0.083333333333333 tsp Garlic powder
  • 0.25 0.25 tsp Salt
  • 0.5 0.5 Tbsp Olive oil
  • 50 50 g Extra firm tofu
  • 46.666666666667 46.666666666667 g Vital wheat gluten
  • For the marinade:
  • 20 20 ml Vegetable stock
  • 0.33333333333333 0.33333333333333 Tbsp Olive oil
  • 0.16666666666667 0.16666666666667 tsp Smoked paprika
  • 0.33333333333333 0.33333333333333 Tbsp Maple syrup
  • 0.083333333333333 0.083333333333333 tsp Salt
  • 0.16666666666667 0.16666666666667 tsp Wholegrain mustard
  • For the topping:
  • Cloves

Method

  1. Blend all of the ham ingredients (apart from the vital wheat gluten) until you reach a smooth consistency.
  2. Add the vital wheat gluten and knead for 10/15 minutes until you have a smooth well-combined dough.
  3. Mould into a joint shape and wrap in tin foil. Steam for 1 hour. A wooden or metal steamer works perfectly.
  4. Whilst steaming, combine the marinade ingredients, heat gently to infuse.
  5. After the steaming has finished, score the top of the ham, stud with cloves, and pour the marinade on top.
  6. Bake uncovered in the oven for 25/30 minutes at 190°C Leave to cool then refrigerate overnight to firm up.
