- 31.25 31.25 grams walnuts, roughly chopped
- 31.25 31.25 grams fresh brown vegan breadcrumbs
- 0.25 0.25 small red onion, chopped
- 0.25 0.25 Tbsp chopped fresh tarragon
- 0.25 0.25 Tbsp chopped fresh chives
- 0.25 0.25 tsp tomato purée
- 0.25 0.25 tsp soy sauce
- 0.25 0.25 tbsp vegan red wine (optional)
- 0.5 0.5 tsp walnut oil, plus extra as needed
- salt and pepper
- vegan ciabatta loaf, sliced, or crackers
Method
- Place all the pâté ingredients in a large bowl and mix together well with a wooden spoon. Season to taste with salt and pepper.
- Transfer to a food processor and blend until it forms a smooth paste. If the breadcrumbs are quite dry, you may need to add a little more oil or red wine, if using.
- Transfer the mixture to four small pots and chill in the refrigerator before serving. Serve the pâté with slices of ciabatta or crackers.
