Ingredients

(Servings: 2)

  • For the pizza base:
  • 250 250 g strong white bread flour, plus extra for dusting
  • 0.5 0.5 tsp dried yeast
  • 0.5 0.5 tsp caster sugar
  • 0.5 0.5 tsp salt
  • 0.75 0.75 Tbsp olive oil
  • 75 75 ml cold water
  • 75 75 ml boiling water
  • For the toppings:
  • 2 2 Tbsp BBQ sauce (either shop bought or homemade)
  • 0.5 0.5 pack Squeaky Bean Sweet Smoky BBQ Chicken Style Pieces (available from supermarkets)
  • half a red onion
  • half a red pepper
  • small tin of sweetcorn
  • A generous handful of vegan cheese
  • ready-made plain pizza base (if you're not making your own)

Method

To create the pizza base (if not using shop bought):

  1. Mix the flour, yeast and sugar in a large bowl
  2. Add the cold water to the boiling water and stir
  3. Add the oil and salt to the water and pour over the dough mix
  4. Stir well with a spoon
  5. Knead the mixture with your hands, until it forms a sticky dough
  6. Add a splash more cold water if required
  7. Dust some flour on a dry work surface and knead the dough onto it for ten minutes
  8. Place the dough back into the bowl and cover with cling film. Leave on the kitchen side to rise for one hour, or until the dough doubles in size

For the topping:

  1. Preheat the oven to 1800c/Gas mark 4
  2. Thinly slice the red onion and red pepper, and drain and rinse the tin of sweetcorn
  3. Grate the vegan cheese
  4. Take your pizza base and spread with four tablespoons of BBQ sauce: or more if you prefer an extra saucy pizza. If using a homemade base, take the dough and knock it with your fist a couple of times before kneading onto a floured work surface, then add the sauce.
  5. Sprinkle over the vegan cheese. Don’t be shy – all good takeaway pizzas come loaded with extra cheese!
  6. Top with the Squeaky Bean BBQ Chicken Style Pieces, onion, pepper and sweetcorn
  7. Place in the oven and wait for the cheese to bubble and the base to brown (usually takes 10 to 15 minutes)
  8. Remove from the oven, generously slice, then devour the pizza
  9. Extra dipping sauce is optional but we love ketchup, herby garlic dip or vegan mayo
