The sweet potato gives a great gooey texture and sweetness to these brownies. As they are fat-free, they are a lighter snack that still feels like a treat.

An optional topping of crushed walnuts adds healthy Omega-3 fats to your brownies, and it looks and tastes great!

If you’re trying to reduce food waste, these brownies are a great way to use up leftover cooked sweet potato (boiled, steamed or baked) – but if you’re starting from scratch, remember to factor in the extra cooking time.

How to cook sweet potatoes

You need your sweet potatoes to be soft and tender for vegan recipes like this, so cut them into even-sized pieces and boil or steam them for at least 20 minutes

You’ll need to peel your sweet potatoes for this recipe, otherwise the skins will make your brownies lumpy and unpleasantly chewy.

To prevent food waste and to make the most of the densely nutritious potato skins, season your peelings and cook them in an air fryer for 10-15 minutes to make potato skin crisps.

Don’t worry about boiling away the rest of the nutrients. However you cook them, you’ll still reap many of the health benefits of sweet potatoes in this recipe.

Alternatively, use baked, whole sweet potatoes. Once your potatoes have cooled, squeeze them out of their skins to use in your brownie batter.

  • 6.25 6.25 g coconut flour
  • 5 5 g oats
  • 6.25 6.25 g cocoa powder
  • 12.5 12.5 g coconut sugar
  • 37.5 37.5 g sweet potato, peeled, cooked, and mashed
  • A handful of crushed walnuts (optional)

Method

  1. Preheat the oven to 180°C/355°F/Gas 4, then add the coconut flour, oats, cocoa powder and sugar to a blender and blend to a fine powder.
  2. Add the sweet potato to the blender and blend until a thick smooth paste is formed.
  3. Spread the mixture into a lined oven tray and top with the walnuts. Bake for 25 minutes until the brownie is cooked.
