The perfect addition to a vegan Christmas roast dinner, these beautifully caramelised root vegetables are roasted to tender perfection.

This recipe can be made with a variety of winter vegetables to create your favourite festive mix. For our perfect plate, we picked carrots, parsnips, swede, red onion, and beetroot.

The natural sweetness of these slowly roasted vegetables is enhanced by a coating of sweet vegan honey with fragrant garlic, rosemary and thyme.

What’s the best vegan alternative to honey?

Vegan honey alternatives like Honea, available on Amazon, make ideal alternatives to bee honey as they offer a similar, slightly floral flavour that will keep your roasted vegetables tasting authentic.

However, the sweet, sticky coating on these vegan honey roasted vegetables can be replicated with a variety of other alternatives.

Agave nectar or maple syrup both make ideal substitutions for vegan honey in this recipe. Alternatively, use a sweet balsamic syrup for a tangier end result.

  • 0.25 0.25 cloves garlic, puréed
  • 0.5 0.5 tbsp vegan honey alternative (we used Honea)
  • 0.125 0.125 tbsp dairy-free butter
  • 0.125 0.125 tbsp vegetable oil
  • 0.125 0.125 tbsp fresh thyme, chopped
  • 0.125 0.125 tbsp fresh rosemary, chopped
  • 0.15 0.15 kg mixed root vegetables, peeled and chopped (we used carrots, parsnips, swede, red onion, and beetroot)

Method

  1. Preheat the oven to 180°C/355°F/Gas 4. In a bowl mix the garlic, Honea, butter, oil, thyme and rosemary together.
  2. Add the mixed root vegetables to the bowl and mix them through the Honea mixture until they are fully coated, season to taste. Add this to a roasting tray and place in the oven to roast for 50-60 minutes.
