This dish is perfect as a side dish for a wide range of different dinners. The spicy hollandaise sauce adds a flavourful kick to the tender lightly fried asparagus.

Asparagus and chillies both have natural aphrodisiac qualities; asparagus because of its vitamins B6 and E, while spicy foods such as chillies are linked to an increased blood flow.

How to serve vegan chilli hollandaise sauce:

This hollandaise sauce tastes wonderful on a side of sautéed asparagus, and suits a wide range of dishes, and there are endless possibilities to add flavour to your meals with this spicy sauce.

It’ll pair wonderfully with other vegetables like steamed broccoli or roasted root veggies.

Create a spicy vegan ‘eggs’ florentine by topping a toasted muffin with wilted spinach and grilled tofu before covering it in this spicy hollandaise sauce.

Or, bend the rules of a tofu Benedict by adding tempeh bacon, avocado, or roasted red peppers.

If you don’t want to fry your asparagus, it can be grilled, steamed, or roasted instead. It’ll taste just as delicious!

  • For the hollandaise
  • 100 100 g silken tofu
  • 1 1 Tbsp dairy-free butter, melted
  • 2 2 Tbsp soya milk
  • 0.125 0.125 tsp turmeric
  • 0.125 0.125 tsp kala namak
  • 0.25 0.25 tsp Dijon mustard
  • 0.5 0.5 Tbsp lemon juice
  • 0.5 0.5 Tbsp nutritional yeast
  • 0.25 0.25 tsp dried chilli flakes
  • For the asparagus
  • 0.5 0.5 Tbsp dairy-free butter
  • 100 100 g asparagus

Method

  1. Add the hollandaise ingredients to a blender and blend until smooth, season to taste.
  2. Add the butter to a frying pan and over a medium heat, fry the asparagus for 2-3 minutes until cooked but still al dente.
  3. Spoon the hollandaise over the asparagus to serve.
