With a rich filling of leeks, dairy-free cream cheese and mustard, beautifully seasoned with garlic and tarragon, this starter is sure to appeal to herbivores and meat eaters alike.

This vegan recipe makes a great starter, but it also serves as a light and nutritious alternative to plant-based meats as a main course, or as a hearty veggie side to a variety of dishes.

  • 2 2 flat field/portobello mushrooms
  • 0.66666666666667 0.66666666666667 large leeks, washed and finely sliced
  • 0.66666666666667 0.66666666666667 cloves garlic, peeled and finely chopped
  • 66.666666666667 66.666666666667 g dairy-free cream cheese
  • 1 1 tbsp whole grain mustard
  • 0.33333333333333 0.33333333333333 tsp dried tarragon
  • 2 2 tbsp breadcrumbs
  • 0.33333333333333 0.33333333333333 tbsp dairy-free butter
  • sea salt and black pepper, to taste

Method

  1. Peel the mushrooms and remove the stalks from the centre of each. Arrange them in a baking dish and preheat your oven to 180°C (Gas Mark 4, 350°F).
  2. Finely chop the mushroom stalks and add them to a frying pan along with the leeks, garlic, tarragon and butter. Sauté these gently until softened.
  3. In a bowl, mix together the cream cheese, mustard, the mushroom and leek mixture and some seasoning.
  4. Stuff the mushrooms with the cream cheese mixture and top with the breadcrumbs.
  5. Transfer the mushrooms to the oven and bake for
25-30 minutes until
cooked through and golden.
  6. Serve immediately on a bed of greens or with sides of your choice. We like steamed baby potatoes and a mixed salad.
