The topping to these delicious vegan crostini combines courgette, apple, mint and spring onion with salt, garlic and olive oil to make a simple vegan starter that will have your guests munching with satisfaction.
Cook’s tip!
The grated courgettes are salted and squeezed so that the crostini stays crisp. Make sure to include step one, as courgettes have high water content, and your bread will become moist and soggy.
There is a freshness to this crostini vegan recipe that makes them light and perfect for a starter. The mint adds freshness, but if you do not like mint, you could substitute the mint with basil or dill.
