The grated courgettes are salted and squeezed so that the crostini stays crisp. Make sure to include step one, as courgettes have high water content, and your bread will become moist and soggy.

There is a freshness to this crostini vegan recipe that makes them light and perfect for a starter. The mint adds freshness, but if you do not like mint, you could substitute the mint with basil or dill.

  • 0.16666666666667 0.16666666666667 courgette (approx. 200g)
  • 0.16666666666667 0.16666666666667 tsp salt
  • 0.083333333333333 0.083333333333333 apple, peeled and grated
  • 0.16666666666667 0.16666666666667 Tbsp chopped fresh mint leaves
  • 0.33333333333333 0.33333333333333 spring onions, finely chopped
  • 1 1 slices of vegan French bread
  • 0.16666666666667 0.16666666666667 garlic clove, halved lengthways
  • olive oil, to serve
  • pepper, to serve

Method

  1. Top and tail the courgette, grate coarsely and spread over a clean, dry tea towel. Sprinkle over the salt and set aside for 5 minutes. Wrap the tea towel around the courgette and squeeze to remove as much moisture as possible.
  2. Transfer the courgette to a large mixing bowl and stir in the apple, mint and spring onions.
  3. Toast the bread slices lightly on both sides. Rub one side of each slice with the garlic halves.
  4. Divide the courgette mixture between the bread slices. Drizzle with a little olive oil and grind a little pepper over them before serving.
