Think it’s hard to get enough vitamin B12 as a vegan? Well, just one serving of this vegan cheese contains the recommended daily allowance of B12 – and it tastes amazing too!

Using yeast extract and nutritional yeast which are fortified with vitamin B12 means that this vegan cheese will be packed with as much of this vital nutrient as possible.

This vegan B12 cheese is delicious served with crackers and pickle and will be a much-loved member of your next charcuterie board. Pair with a vegan wine for a real party time treat.

Is this recipe gluten free?

Brand name Marmite contains wheat due to the brewer’s yeast it is extracted from. However, some supermarket brand and organic or ‘health food’ brands of yeast extract are gluten free. Due to risks of cross contamination, it is always best to check for a yeast extract that is labelled as ‘gluten free’ by the manufacturer, particularly when cooking for someone with coeliac disease.

If you’re using a gluten-free yeast extract, it’s easy to make this recipe gluten free! All other ingredients in this vegan B12 cheese are safe for a gluten-free diet, just look out for ‘may contain’ warnings on the powdered spices in case of cross-contamination.

What is powdered agar?

Powdered agar, also known as agar agar, is a vegan substitute for gelatine, which helps this recipe to firm up into a cheese-like consistency.

Agar agar is made from red algae, which is heated in water and filtered to leave behind a jelly-like substance. This jelly is then dried and turned into powder.

As well as being much kinder to animals than gelatine, agar powder is also a good source of many minerals including manganese and iron, and also contains folate, zinc, and vitamin K.

  • 12.5 12.5 g cashews, soaked overnight
  • 0.33333333333333 0.33333333333333 tsp yeast extract (e.g. Marmite)
  • 3.3333333333333 3.3333333333333 g nutritional yeast
  • 0.25 0.25 tbsp lemon juice
  • 0.083333333333333 0.083333333333333 tbsp tahini
  • 0.083333333333333 0.083333333333333 tbsp agave syrup
  • 0.083333333333333 0.083333333333333 tbsp garlic powder
  • 0.083333333333333 0.083333333333333 tsp mustard powder
  • 0.083333333333333 0.083333333333333 tsp smoked paprika
  • 0.041666666666667 0.041666666666667 tsp sea salt
  • 20 20 ml water
  • 0.083333333333333 0.083333333333333 tbsp powdered agar

Method

  1. Add the cashews, yeast extract, nutritional yeast, lemon juice, tahini, agave syrup, garlic powder, mustard powder, smoked paprika, sea salt and 60ml of water to a blender and blend until smooth.
  2. Add the remaining 180ml of water and the agar powder to a saucepan and mix well. Bring to the boil and let it simmer for 3-4 minutes, ensuring all the agar has dissolved.
  3. Place the mixture in a blender and blend until fully mixed and smooth. Pour the cheese mixture into a lined mould and set in the fridge overnight.
